Cowboy Egg

As I was discussing breakfast restaurants with my friend Alfa+ the other day, I got inspired to do Cowboy Egg, AKA egg-in-a-hole, for myself 😉

What you need

  • One egg
  • Two slices of bread
  • Swiss cheese
  • Mustard
  • Sun dried tomatoes
  • Burger *optional*
  • One tbs olive oil
  • Salt & pepper

Method

  • Cut a circular hole in the center of one of your slices and fry it with olive oil

  • Crack the egg into the hole

  • Add seasoning, salt & pepper

On the other slice of bread I had mustard and a couple of slices of sun dried tomatoes… usually the cowboy egg is an open face sandwich, but I was just super hungry and it was brunch time since I missed breakfast, I wanted to have a BIG sandwich 😉

I added a hearty juicy burger <3

and melted swiss cheese too somewhere in there

Here it is… my cowboy egg *sandwich*
